Chicken and dumplings for two

 

For the chicken stew:

  • 1 1/2 cups cooked chicken, shredded or cut
  • 1/2 tbsp butter
  • 1/3 cup chopped celery
  • 2/3 cup chopped carrots
  • 1/4 cup chopped onion
  • 1 tsp minced garlic
  • 3 cups chicken broth
  • 1/4 tsp dried thyme
  • 1/4 tsp poultry seasoning
  • salt and pepper, to taste

For the dumplings:

  • 3/4 cup Bisquick mix
  • 3 tbsp sour cream or plain Greek yogurt
  • 3 tbsp milk (add extra for desired consistency)
